A Japanese study published in the November 2008 issue of the Journal of
Clinical Biochemistry and Nutrition found that chemical substances
present in lemons can help stimulate weight loss and suppress weight
gain. For three months, the study tracked the results of mice grouped
into high-fat diets, low-fat diets and high-fat diets including lemon
polyphenols extracted from lemon peel. According to the study, "body
weight gain, fat pad accumulation, the development of hyperlipidemia,
hyperglycemia, and insulin resistance were significantly suppressed by
lemon polyphenols."
